Coconut Candy

 

Ingredients:

 

1 + 1/4 cup Coconut Butter 

3/4 cup Coconut Oil

1/3 cup Peanut/Almond butter or other Nut Butter

1 cup Peanuts/Almonds chopped

1 cup Shredded Coconut

1/4 to 1/2 cup Honey, Maple Syrup or other sweetener

1/2 cup Chocolate Chips

 

Steps:

 

1) Warm the coconut butter so that it can be stirred.

2) In a mixer, combine coconut butter and coconut oil until well mixed. (This step can be done by hand as well)

3) Add nut butter and sweetener and mix well

4) On a cookie sheet greased with coconut oil, sprinkle shredded coconut, nuts, and chocolate chips

5) Drizzle the coconut butter mixture over everything

6) Put in freezer for 30 min

7) Remove and break up into smaller chunks

8) Store Coconut Candy chunks in a container in the freezer

 

Serve the candy immediately from the freezer — the coconut oil will melt in your hands if kept too long
